Mango salsa

One of my favorite things to do is cook but I do love doing something better than cooking..... Cooking with my husband! :-) it does not happen often but when we get to it makes me one happy person!... As he was cooking up some white hot burgers and fries I made some mango salsa!

Texas Caviar........ if you make or try anything new this year make it this !


It looks and smells amazing let you know in 2 hours how it taste lol....
ok it has not been 2 hours  but I couldn't wait any longer ...IF YOU TRY ANY NEW FOOD THIS YEAR MAKE IT THIS !
I will try to remember step by step how I made it ( even my hubby liked it and he is super picky )
remember when I get an idea in my crazy brain I surf the web and find a million different recipes to get a general idea and then make it all work.
For this one my base recipe was

this is how I made it
1/2 a yellow onion
1 Yellow bell pepper ( because it was pretty )
2 green onions
2 fresh jalapenos seeded 
about a tablespoon minced garlic ( I use the one in the jar )
1 can Rotell tomatoes and green chili DRAINED ( I used the walmart brand mild )
1 can black beans (drained and rinsed )
abut 2 handfuls of frozen black eye peas
2 handfuls frozen sweet corn
 1/2 cup zesty Italian dressing
avocado
 cilantro

chop the onion,bell pepper,green onions,jalapenos and put in a bowl ( I chopped as small as I could because I like a little of everything in each bite ) add garlic can of Rotell tomatoes with green chili, black beans. black eyed peas and corn. I then added the Italian dressing and let it sit covered for 2 hours ( I know I know I could not wait that long )
after tasting it and seeing the bag of avocado on the counter I diced up 2 and threw them in with some salt and chopped cilantro
Changes I would make ...maybe use the medium Rotell for a little heat and try hard to keep it away from me so I don't eat the whole bowl !

End of the Year and a head full of Memories :0)

Today I woke up thinking about Kevin, I am unsure why new years eve always makes me think of him more than usual. Could be that even though we never spent a new years eve with him we always talked in some way on this day. I suppose we still do since I woke up thinking I am going to make some "little food" today( aka lots of little things to make one very big plate) and invite Kevin and then Kevin will turn them down by saying "No thank you I am trying to quit eating".....and then make a plate full and go back for more lol. Anyway here I go getting lost in my own thoughts again

Today like every New Years Eve me and my girls are going to make a bunch of appetizers and snack on them all day and into the night. I am thinking of making Queso and chips, pigs in a blanket, a fruit tray, and my oldest daughter has talked me into making some chocolate covered strawberries. Also of course I am going to make some wings, and jalapeno poppers and maybe little cheese burgers with my slider pan. ( see told you a lot of little things to make one HUMONGO plate. should be fun :0) I will post some pics as we go about the day Happy New Years everyone

goodies for monsters :0)

my wonderful husband and trolls bought me a cake pop pan for Christmas so of course I had to try it out! These are so fun to make and eat I had a hard time getting them dipped but just turned out that I did not put the pop stick in the cake far enough to hold it good. After I figured that part out all was good they were super fun to make I cant wait to get them to my 2 monster nieces
